Christmas Ricotta Chia Pudding

Ingredients
½ cup smooth ricotta cheese
2 tbsp chia seeds
¼ cup milk (dairy, almond, coconut, or oat)
1–2 tbsp honey or maple syrup (to taste)
½ tsp vanilla extract
¼ tsp cinnamon
Pinch of salt
Festive Toppings (optional but beautiful!)
Pomegranate seeds
Fresh orange zest
Crushed pistachios
Fresh berries
Extra honey drizzle
Mint leaves
Instructions
1. Make the Base
In a bowl or jar, whisk together:
ricotta
milk
honey
vanilla
cinnamon
pinch of salt
Mix until creamy and fully combined.
2. Add the Chia Seeds
Stir in the chia seeds until evenly distributed.
Let sit for 5 minutes, then stir again to prevent clumping.
3. Chill
Cover and refrigerate for 1–2 hours, or overnight for a thicker, creamier pudding.
4. Serve Festive-Style
Stir once more and spoon into a glass or bowl.
Top with pomegranate, pistachios, orange zest, or berries for a holiday pop of color.
Tips & Variations
Sweeter pudding: Increase honey to 2–3 tbsp.
Extra creamy: Add 2 tbsp Greek yogurt or mascarpone.
